Varia
Varia is made with lean minced meat, mixed with spices (pepper, paprika, anise) and salt. Once mixed, the filling is inserted inside the leg and thigh crust of the pork, sew the edges by hand and cook long in the boiler. Then it's hung to dry and cure for several weeks.
